When I edit an entry, I can change the language no problem. However, after saving this entry and then I try to edit it again, I cannot change language.
I’ve enclosed an animated GIF showing this problem in action.
Please advise.

Niall, can you try upgrading to the latest version before we spend more time on this. Its possible this was already fixed. In fact I think I remember a similar bug awhile back.

I’ve upgraded and am now seeing the below error when I try to update an entry.
Fatal error: Call to undefined method Publisher_model::is_ignored_channel() in /Users/nobrien/Documents/president/ee/admin/expressionengine/third_party/publisher_low_search/ext.publisher_low_search.php on line 127
Please advise.

You need to go to Github and download the latest version of that Low Search Extension. https://github.com/litzinger/publisher_low_search
